  • Melt butter in a dutch oven over medium heat. Add onions and Salt. Stir and Cover for 5 Minutes to Soften. Remove the Lid and stir occasionally until they are caramelized. Should take 45 minutes
  • Stir in all purpose flour and Forager Seasoning Blend and cook for a minute and then deglaze the pan with dry white wine or cider. Stir in beef stock slowly. Add in thyme and rosemary and reduce heat to simmer for a half hour
  • Turn on the broiler. Ladle the soup into oven safe crocks and put a piece or two of bread on each and cover with gruyere cheese. Melt the cheese
