Smoked Maple Bourbon Sinnamon Rolls

Equipment Used:

  • Stand Mixer with Dough Hook
  • Cast Iron Pan
  • Rubber Spatula
  • Pellet Grill
  • Mixing Bowls

Ingredients:

Dough

  • 1 packet of Active Dry Yeast
  • ¼ cup of Water (Lukewarm)
  • 1.5 Cup of Warm Whole Milk
  • ¼ Cup of Granulated Sugar
  • 1 stick of Unsalted Butter (Room Temperature)
  • 3 Large eggs
  • 5 cups of all purpose Flour
  • ½ Teaspoon of Salt

Filling

  • 1.5 Tablespoons of Sinnamon Crisp
  • ½ Cup of Brown Sugar
  • ½ Cup of Granulated Sugar
  • 6 Tablespoons of Unsalted Butter (Room Temperature)

Icing

  • 2 Tablespoons of Whole Milk
  • 2 Cups of Powdered Sugar
  • 2 Tablespoons of Maple Syrup
  • 2 Tablespoon of Bourbon
  • 1 Teaspoons of Vanilla Extract

Instructions:

  • In the large bowl of the stand mixer, mix the active yeast in with the water and let it dissolve.
  • Add the milk, sugar, and eggs.
  • Attach the dough hook on a medium setting and add in flour and salt gradually. Scrape the bowl with a rubber spatula when needed.
  • Cut the butter into small pieces and incorporate them into the mixture.
  • Beat for about 5 minutes until smooth.
  • Flour a work surface and knead for 5 minutes.
  • Place into a greased mixing bowl and cover with plastic wrap and a clean kitchen towel at room temperature for an hour. It should double in size.
  • Punch the dough down and put it on another floured surface and roll it out into a big rectangle.
  • Mix all of the filling ingredients and spread on top of the dough. And roll the long side of the rectangle tight away from you. It should look like a log.
  • Cut up the log into the desired amount of rolls and place into a greased cast iron, cover with plastic wrap and let them rise for 30 minutes.
  • Bake at 350 for 30 minutes, they should look golden brown
  • Mix the icing ingredients and spread over the top of them when they are warm
