Look what the Leprechaun Left Behind: Corned Beef Edition

If you're a St. Paddy's Day Pro, you probably got a free ice cream somewhere for wearing an absurd amount of green and you cooked enough corned beef to feed the whole neighborhood. 

Don't let that delicious meat go to waste! We've got four Tacticalories-inspired recipes to breathe new life into those beefy leftovers. Time for the encore because you're about to have corned beef for breakfast, lunch, and dinner...

Let's beef...

1. BREAKFAST: Corned Beef and Sweet Potato Hash 

Ingredients:

  • 2 cups corned beef, diced
  • 2 large sweet potatoes, diced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1 tbsp Tacticalories ASSAULT & PEPPER Seasoning
  • 4 eggs 

Cook Time: 10-12 minutes

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add sweet potatoes and onions, cooking until tender.
  2. Stir in corned beef and ASSAULT & PEPPER Seasoning, cooking until the mix is slightly crispy.
  3. Crack four eggs into the skillet. Scramble everything together. Keep those eggs moving so they don't burn.
  4. Serve hot for a hearty, flavor-packed breakfast.

2. LUNCH: Corned Beef Reuben Sandwich Sliders

Ingredients:

  • 12 slider buns or Hawaiian Rolls
  • 2 cups corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 12 slices Swiss cheese
  • Thousand Island Dressing
  • Tacticalories PRIMAL SPG seasoning
  • Butter for toasting

Cook Time: 10 minutes

Instructions:

  1. Butter the insides of the slider buns and lightly toast them on a skillet.
  2. Assemble the sliders by layering corned beef, sauerkraut, and a slice of Swiss cheese on each bun. Add a generous dollop of Thousand Island Dressing and a sprinkle of PRIMAL SPGfor good measure.
  3. Serve the sliders warm, with the cheese melted and gooey.

3. DINNER: Corned Beef and Veggie Stir Fry 

Ingredients:

  • 2 cups corned beef, julienned
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tbsp RONIN sauce
  • 1 tbsp olive oil
  • 1 tbsp Tacticalories HERB DUST Seasoning

Cook Time: 15 minutes

Instructions:

  1. Heat olive oil in a large skillet or wok over high heat. Add the vegetables, stir-frying until just tender.
  2. Add the corned beef, RONIN, and HERB DUST Seasoning, stir-frying for another 5 minutes until everything is well combined and heated through.
  3. Serve this vibrant, flavorful stir fry over rice or noodles for a satisfying dinner.

Bonus Recipe: Spicy Corned Beef Chili (Any meal...anytime)

Ingredients:

  • 2 cups corned beef, diced
  • 1 lbs ground beef
  • 1 onion, diced
  • 2 cans diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 2 tbsp Tacticalories BENCHWARMER Chili Seasoning
  • 1 cup beef broth

Cook Time: 30 minutes

Instructions:

  1. In a large pot, sauté the onion and ground beef until brown. Add the corned beef and BENCHWARMER Chili Seasoning, stirring to combine.
  2. Stir in the diced tomatoes, kidney beans, and beef broth. Bring to a boil, then reduce heat to simmer for 20 minutes, allowing flavors to meld.
  3. Serve hot, garnished with shredded cheese or sour cream.
