[Breakfast Hack] Assault & Pepper Egg Bake

 

One of the best things I do for my diet consistency is meal prep. Week to week, the depth of this prep changes but I typically make an effort to prepare at least a few meals for the week. A dozen chicken breasts, a few cups or rice and broccoli and I'm done.

The issue is; I find that week after week, my work-day breakfast quality was lacking... BIG time. My mornings aren't getting any less hectic, so I set out to find a better way.

These little guys are almost too easy.

Ingredients

  • 1 dozen farm fresh eggs (Trust me, they're worth it)
  • 1 whole green bell pepper, finely chopped
  • 4 green onions/scallions, finely chopped
  • 12-15 grape tomatoes, quartered
  • Cheese
  • Tacticalories Assault & Pepper seasoning

Grab a high-quality cupcake pan, I grabbed one of these from Amazon.

Pre-heat the oven to 350* F. Grease each cup, I used Olive Oil Spray, then crack an egg into each. From here you could choose to leave them as is with the yolk separate from the white, or mix them. Top with equal amounts of each veggie, then give them an ample amount of Assault & Pepper seasoning to top each one. Finish by topping each one with a pinch of cheese.

 

Toss the pan into the oven for 15-20 minutes depending on how crispy you want the outcome.

Now - store for easy retrieval on busy mornings. You can even use these as an addition to other breakfast items. Remember, "Victory Favors The Prepared". Do the work up front and set yourself up for success.
