Maple Keto Pancakes

I've been making a version of these pancakes for over 5 years now. So far, this is the easiest, cheapest, and best-tasting method to prepare low-carb pancakes. With the recent addition of our Drop Tine Maple Seasoning, you can bring the taste of genuine homemade breakfast sausage straight to your plate. As always, we recommend serving with fresh, local bacon using our "Easiest Maple Bacon". Just add a pinch of Drop Tine Maple to the bacon as well. Enjoy!

Ingredients

  • 1.5 Scoops of Low-Carb Protein Powder (We used Primal Kitchen Collagen Fuel)
  • 3/4 Tsp Vanilla Extract
  • 1/2 Tsp Drop Tine Maple Seasoning
  • 3 Whole Eggs
  • 1.5 Tbsp coconut oil or EVOO
  • 1 Tbsp pure psyllium fiber or soaked chia seeds
  • 3-4 Tbsp water (Add slowly during mix. You don't want too much water.)
  • 1 Tbsp butter

Directions

In a small bowl, mix all ingredients except the butter. Mix until smooth, pancake batter consistency.

I prefer an electric griddle, but you can also use a small skillet. Heat to medium high heat. Spray surface with non-stick spray if needed.

Use a 1/4 cup measuring cup for perfect pancake size. Heat for 2-3 minutes per side or until brown. 

Serve topped with grass-fed butter and with local maple syrup (if your macros allow) or a sugar-free option.
